I've started eating the wings of the fish I catch. My favourite way to cook them to date is get a wood fire going and season the wings with salt, pepper, olive oil, and smoked paprika. Once the fire has died down into coals i out the wings, skin side down on the grille, and put a lid over the top to catch the smoke from the unburned wood and smoke it for about 30 minutes. Bloody marvellous!

I like to fry the wings, scale, cut the fins off, dust with flour and fry in a shit load of garlic butter and onions until golden brown or smoke them. Best beer nibbles ever.
The heads...can't go past boiled, with onions and chilli flakes..brings out the nutty taste of the eye balls...👍🏻

I’m 57 and have been eating the fish heads ever since I was a kid. Dad would bring home a fish (caught himself or sometimes won in a raffle at the pub) and the very first time he bought one home and said who wanted the head - I volunteered and just tried it (I was literally only about 7 at the time). I never looked back. I thought after that that the fillets were boring and plain and compared to the head where there are all sorts of gelatinous flavours and textures, the eyes, the cheeks and jowl meat plus the brain meat … so much so that I will to this day ask complete strangers at the filleting stations if they eat the heads and if not did they mind just giving them to me. We waste so much fish meat in the western world! Islanders, Māori, Asians plus many other indigenous peoples have always eaten the heads but sadly very few westerners. Give a head a go I say if you haven’t tried it. Fresh and hot - you will not look back!

Steamed fish head is another easy & tasty choice, just add ginger, green onion & soy sauce 😊

I always bake and eat the wings and watch my miri and daughter eat the fillets. They sit there looking at me with stank face 🤣 they don't understand 😏

Fish frame and head soup is my favorite. I just filet with the wings on and eat it bone in. Eat everything except the gills n guts.

Oh my, that oven is so dirty. You need to clean it up. Nah. I used to keep cleaning my own stove and oven. That is a shame.
