Hasselback Potatoes at their best! Topped with cheese, cilantro and a sunny side up. Heavenly, right?

It’s my twist on one of our favorite childhood meals here in Romania: Fries with cheese and eggs, but in a cleaner & healthier way to enjoy it.

So easy to make:
-Peel & wash your potatoes;
-Put them in a baking tray and drizzle, brush or spray some olive oil;
-Sprinkle: salt, paprika & thyme;
-Bake for 30-35 minutes at 200C or until they reach the crunchynes you prefer.
-Enjoy them topped with cheese, fresh herbs and a soft yolk egg.
