Thank you for revealing to others why I find Baking so RELAXING! It helped me de-STRESS during university exams and intensive chemistry labs…I still BAKE as a method to relieve my stress!
I don’t eat my own creations, instead I gave them away to fellow students, the elderly, and homeless…especially as they have so little! I didn’t have much while attending university, and worked while getting my education, so what little extra I could afford to give to others less fortunate was usually in the form of Homemade Bread - all kinds of- from a regular boule, and yeasted breads to sourdough blueberry muffins (which I’m making for my mom and sister as a gift to take home following their visit!🥰), now I make more advanced Pastry/baked goods…but I still enjoy both and can spend 7days a week, 365 days a year baking!
However, I also do chocolatiering, Candy pulling, and make my own holiday candies/chocolates….but…my first love will always be PASTRY! It has always been my comfort and stress reliever…just as a painter ( when I have time I paint too, as is common with us “Creative Tylpes).
I learned to make bread by hand - 8 loaves at a time, a lot for an 8-9 year old - but - my moon was ill with Cancer and I didn’t know if she would ever return home, so I started baking bread…let’s just say it wasn’t the best tasting, nor did it rise as it should have, but
looking back it was my way of coping, and trying to help my Dad, feed my little brother…but…I was blessed when she returned and taught me how a Pastry Chef creates cakes, decorates and specializes them - even more so for a wedding, birthday, holiday, or another occasion. And it also depends upon one’s mentor and style of baking or cooking…French, Italian, Spanish…European, Ukrainian, Koran, even North American!

I look Caucasian, but I have a blended ethnicity. So when I got married, I asked my wonderful mother, who is gifted and knows so much more than I…it made sense to ask the very pastry chef and amazing woman that taught me how to formally decorate seasonal, birthday, wedding, and other special cakes, that I would ask my beautiful mother to make the different flavours of cakes, different styles, and figure how high to build it and how we would build it! To say it was a feat, is no exaggeration! I had a central set of cakes - 5 in all - with a champagne fountain. For the sides, we choose 7 smaller, flavoured cakes. All cakes are supported by pillars, but I had a “trailing” or steps in between the first and following cake, a slow ascension, until both sides meet at the top of the middle cakes. It was a lot of work…days of work, months and weeks of prep and ordering, and then finding an hotel or location with several massive fridges to dedicate to “housing” enough cake to feed 1500+ people was a mammoth feat! But, we were fortunate, there were only a few mishaps, and we came prepared with extra icing, supports, and the best thing we could be prepared for is knowing some things are out of our hands…for instance…someone could drop a cake by mere tripping…an attitude I wish I was able to embrace more! Fortunately, my patient, perfect mother handled everything like a pro…and between us…we did a great job…well…she was incredible to watch under pressure, as she not only had to prepare, construct, decorate, deliver my cake (even with my help she had so much to do!), as she planned my wedding decorations - so between the church, hall, homes, and the hall/home for the traditional Gift Opening the following day, included a full spread Brunch and decorations….lots and lots and lots of work! But, I enjoy working with my mom! We don5 need to talk in the kitchen, as we know hoe each other does things…which is very responsibly and nearly identical, so we know soothing is done or prepared properly and so it makes working with her a true honour and JOY!

Listening to this music RELAXES me…nearly as much as baking does! Usually I listen to music and bake. However, you MASTER baking and cooking then edit it to the best music….perfect!

Watching you bake and cook is a real JOY for me! As I have Cancer, and very ill, so I cannot do what I once did with ease! Your videos/posts bring me immense JOY and GRATITUDE for those like yourself…making our days brighter!
