Chocolate Veggie Muffins 🍫
Ingredients
•2 eggs
•1 banana
•1 cup grated carrots
•1 cup loosely packed spinach
•1 cup zucchini
•1/4 cup avocado oil
•1/4 cup milk•1/3 cup honey •1 teaspoon vanilla extract
•1 1/4 cup flour
•1 teaspoons baking soda
•1 teaspoons baking powder
•1/3 cup cocoa powder
•¼ teaspoon salt
•¼ cup chocolate chips

Directions
1)Blend together the veggies & wet ingredients.
2)In a separate bowl, mix together all of the dry ingredients.
3)Add in the mixture from the blender and stir together.
4)Spray muffin tin and spoon the muffin mixture into the cups.
5)Top with chocolate and bake in oven at 350 F for 20 minutes.

Veggie Chicken Nuggets 🍗
Ingredients
•1 LB ground chicken
•1/2 cup cauliflower
•1/2 cup broccoli
•1/4 cup carrot
•1 tsp garlic powder
•1 tsp onion powder
•1 tsp salt
•1.5 cups panko crumbs

Directions
1)Chop and roast veggies in oven until tender.
2)Once veggies are cool add to food processor and purée.
3)Add turkey, puréed veggies, & seasoning to a mixing bowl. Mix together until combined.
4)Shape meat into nuggets and coat them with the panko bread crumbs.
5)Bake in oven at 350 F for 20 minutes & check with meat thermometer. Let cool and enjoy! 😊

Veggie Macaroni & Cheese 🧀
Ingredients
•1/2 cup of carrots, chopped
•1/2 cup of cauliflower
•1/2 cup of butternut squash
•1 cup of water
•4 tablespoons unsalted butter
•¼ cup all-purpose flour
•1 teaspoon salt
•1 teaspoon garlic powder
•¼ teaspoon black pepper
•4 cups milk
•2 cups water
•1 box of elbow pasta
•2 cups shredded cheddar cheese

Directions
1)Roast your veggies in the oven until tender.
2)Cook pasta according to boxes directions.
3)Place veggies in the blender with 1 cup water and blend until smooth.
4)Melt butter in pan and add flour. Cook butter and flour mixture for a minute. Add the milk and bring it to a boil.
5)Remove from heat and mix in your cheese, seasonings, & veggie puree.
6)Add pasta mix together and enjoy!

Have you tried freezing these and reheating them? I’m wondering how well they would hold up doing that if they were to be made in bulk 🤔 they seem hearty enough to handle that process!

What I can say to the mac and cheese thing why just do it in vegan I loved it every time sister did it (she was vegan) when I was younger there veggies and nuts and and don't know the English word but in German it's hefeflocken it makes it taste like cheese
