Know a guy who thought he was gluten intolerant. At the end it was lactose. He always felt better when he ate gluten free products, but most of them are also lactose free.

I know a few people with ciliacs. I’m glad the health trend has made it easier for them to find food options.

Gluten sensitivity is not celiac disease. They're 2 completely different things.

Celiac is an autoimmune condition

My girlfriend does not have celiac disease, but after her gallbladder was removed she became very gluten sensitive. Doctors don't fully understand why, I suspect it's mild IBS but any gluten will wreck her stomach. She's fine with cross contamination though. This is likely a very rare case though. I'd be curious to read studies on gluten in the US vs Europe because our breads and pasta are quite a bit different and while it doesn't cause digestive issues it could be a factor for poor health in the US

Celiac Disease is a horrible thing for those who do have it.
My husband very nearly died from it.
The lining of his small intestine had become so flattened trying to avoid absorbing gluten (auto-immune response) that he was no longer absorbing any nutrients and when they discovered this, his hemoglobin was at the level of shock...he required several transfusion and iron to come back around. We were VERY lucky and he eats ZERO gluten now.
Warning-he had NO idea he had this till it almost killed him.

If we're being technical, gluten isn't found in wheat, it's a protien formed from glutenin and glytenin in the wheat when mixed with water.
It's also what holds the bread together and all the air in so that you don't have a slab of biscuit instead of a loaf of bread

Most of us are allergic to the glyphosate that they treat Western wheat crops with. If I eat imported Italian pasta it doesn't give me brain fog and stomach issues.

The reason there are more people with sensitivity to gluten today is cause the amount of chemicals in the soil the wheat is grown in. We have dangerously unsafe soil

My mother has celiac disease. She has to be careful even with cross contact. If she eats any gluten at all, she’s in pain.

Even if you don't have celiacs most people are sensitive to gluten. Almost everyone gets at least a small amount of bloating.

Wheat allergy is very real and often misdiagnosed as gluten sensitivity.

I went to HS with someone with celiac. I is difficult to deal with and I feel sorry for anyone who has to deal with it.

My understanding is if your body tolerates gluten, it's harmless.

Okay, I’m not sure if this is correct as I’m fine with gluten but what I’ve been told is this:
Wheat has been breed/genetically modified to be resistant to glyphosate basically roundup a herbicide. They do this because what they can then do is spray the wheat and the weeds, the weight does die but it dies much slower at much higher rates of the glyphosate with the grains still attached to the flower spike. Which then allows the farmer to harvest the wheat easily with way less losses. The weeds however die more quickly and are more deeply affected and die off before the wheat. Now here is where I’m not sure what’s going on but apparently the gluten in the wheat is where the residual glyphosate either causes problems or stay so I’m not sure. This is why they are assuming people are having more and more problems with the gluten in wheat. I probably got that mostly correct, but I’m sure there’s details I’m wrong on.

Feels like there are too many cases of people with auto immune diseases who are affected by their gluten consumption.

My family had shit luck with COVID. No gluten sensitivity before catching COVID. After, 3 of us became gluten sensitive. After a year, 2 of us are better, 1 of us still needs to be gluten free. Doctors confirmed this, but have no treatment suggestions

Many people with gluten sensitivity also seem to maybe be reacting the guificate in the gluten and not the gluten itself self. Not sure science yet, but it is a current theory as well

I have that sensitivity to gluten. If I get some of those proteins into my digestive tract it causes an autoimmune reaction. This mean my immune system attacks my own body. This is not a normal situation for most folks out there, it's a disease process.

Wheat, like any food, can be overconsumed and result in a negative body response, but that isn't the same thing as the auto-immune reaction. Corn can do similar things.

Another perspective is it’s not necessarily the gluten but the herbicide that we drench our wheat fields in that’s causing the reaction in some people!
