But with countless wars and no documentation in the modern language, we lost a lot of knowledge about the previous civilizations.

For the Roman concrete - they just built thicker. Nowadays the concrete doesn't hold for just 80 years. If we would build walls that thick again it would hold longer. But we build thinner with steel in it for stability/static reasons. That brings a few new problems which Romans didn't have like oxidation or corrosion. Also the additives are different than nowadays, so a replication isn't possible at all. Mystery solved.

The Stradivarius violin had a specific sound because it was made out of wood from a certain tree that had survived thru the "Little Ice Age" that began around 1300 to 1800. I'm sure their technique was impeccable and did have a bit to do with the sound, but the clincher is they used Maple that had survived the "Little Ice Age".

Gallileo is not “the” inventor, per-say, of the telescope. Hans Lipperahey (1600), a German-Dutch lens crafter invented lenses to help navel vessels see further. Gallileo modified the invention and can be attributed to be the first to use it for astrological purposes.

Making of Damascus steel was lost due to English colonisation of India, the English cut fingers and hands of Indian craftsmen... true story... British used to take raw materials from India, process them in England and sell it back to its colonies, however, craftsmen in India were better at making metal and textiles by hand which English could not compete by manufacturing in England as transportation and manufacturing goods was expensive. Shampoo, perfume and a lot of other daily use stuff are from India, thank god the British decided that hygiene and taking bath was Important.

So, basically, the MIT replication of Archimede's Heat Ray Weapon is on the list of "technologies we still can't replicate?" Who writes this crap? Damascus steel isnt a lost technology, it's made by combining low carbon iron with high carbon steel. The point is that it makes a steel that is both very hard to keep an edge and very flexible to avoid breaking on contact with other steel. Any experienced swordsmith can make it, it's not that difficult.
