Don't forget to use food-approved/safe glass, some bottles are made just for show and could leach unhealthy things into whatever you put in them.

I was always told that bacteria in the plants/herbs will thrive in oil, which is a bad thing. The way I learned through research is to heat the oil and herbs to just under boiling for ten mins then strain out the herbs.

I have used chillies and rosemary in the past, but they grow some sort of slime around them (fungus I assume), can I avoid that by simply placing the bottles in the dark?
