Dried fruit has the same sugar as fresh fruit, the same fiber as fresh fruit, the same everything as fresh fruit.
The only difference is you get more of these nutrients per weight compared to fresh fruit.
The problem is that we tend to eat way more of the dried because it's condensed into a smaller volume.

You should be more detailed with your list. Glad you specified Starbucks, but the coffee is not the problem - its the sugar. Your list mostly boils down to hidden sugar.

it’s near impossible to avoid sugar in today’s world. depriving yourself of common tasty foods with other nutrients and just eating the most bland stuff you can find isn’t worth the stress

Although dried fruit has sugar, it is a natural sugar, and it also has fiber, whereas refined sugar has zero fiber and gets absorbed faster than the fruit sugar.

For dried fruit, you just have to eat the same number of fruits than fresh fruits, not the same weight.

You’re absolutely correct this is why there is a health crisis. First it starts with insulin resistance then pre diabetes and eventually full blown diabetes.
