Turkmens and Mongols were raised as hunters since their child hood. They were naturally knights and archers and mastered ambushes although they were very brave. They weren't brave fools like Viking berserkers and used their battle rage only when they ran out of tricks

to be fair though, europeans quickly ended up learning how to deal with the horsement of the steppes and during their second invasion into Hungary they were crushed so severely that they never even considdered trying it again, bela IVth had been criticised heavily for his inabillity to effectively counter them during the first invasion so he set to work fixing that but would not experience the second one himself

he mostly just had castles built, reinforced and ordnances enforced for what to do in case of an enemy army, farmers would harvest all they could and would bring it all to the castle where the entire local population would take shelter. nomadic hordes were such fast and effective campaigners because they didn't need a large supply train, they would mostly live of the land, they couldn't that time around and ended up trying to besiege some castles, maybe taking one or two but at an unacceptable cost.

meanwhile the king of hungary mustered his proffesionalised army and marched to crush the two mongol armies destroying one entirely and the other broke apart and fled. soon after the mongols would lose more and more influence in that region whilst also losing their edge in the middle east as the mamluks chose to fight fire with fire and use the horseback archers and lancers against them (the latter was also done by europeans, and effectively so in the end but horseback archery never really cought on in most of europe, instead heavily armored crossbowmen, bowmen and infantry tended to take the main stage allongside knights which were the most heavily armored warriors of their age, (so basically they just outranged the mongols with foot archers and crossbowmen and if they got to close they would face heavily armored infantry and be charged by the tanks of their age (the mongols were no doubt more skilled as general horsemen but they rode light hardy ponies, european knights were so heavy they rode massive warhorses that by themselves were worth more than most people would have earned in their lifetime perhaps even several, they were not even ridden on the journey, knights would ride a common sadle horse and would mount their warhorses only for battle or perhaps also for tourneys
