Bison is definitely my favorite bovine meat!!! I prefer "wild" meats over their industrial farmed counterparts.

Do you use your fingers to measure the thickness of the steaks so they’re uniform? Or just eyeball it?

Damn that looks good. Not a fan of far so the leaner the better. I appreciate all the people that work the animal before it makes it to the dinner table. From the great farmers that raise the animal to awesome butchers that cut them up.
