Learn step by step process for baking Walnut Caramel Mirror Glaze cake. Honestly it took a lot of courage for me to try this cake. It is soooo beautiful that i was intimidated by it.
But i still decided to make it. It has many layers but they can be made easily, one step at a time.
And the taste is mind bogggling!!!
I like making decorated, fancy party cakes, but an elegant cake like this is always special.
This is not something that one can easily get at a local bakery. It needs so much precision and love and that's what makes it outstanding. :)

Ingredients:
Walnut Cake
2 egg whites
Pinch of salt
1/4 cup sugar
1/2 cup walnuts, ground
1.5 Tbsp all-purpose flour

Chocolate Layer
4 oz semisweet chocolate
2 tbsp whipping cream

Walnut Caramel Layer
1/4 cup sugar, for caramel
1 tbsp water
1/2 cup walnuts, toasted, cut into smaller pieces
4 tbsp butter
2 egg yolks
2 tbsp sugar, for mixing with yolks
pinch of salt

Mascarpone Mousse
8 oz (1 cup) mascarpone, room temperature
1/2 cup powdered sugar
1 cup whipping cream , chilled
1 tbsp gelatin powder
1/4 cup cold water
1.5 tsp instant coffee
1 tsp vanilla extract

Caramel Mirror Glaze
½ cup sugar
1 tsp water
⅓ cup water
¼ whipping cream
1 Tbsp cornstarch
1 tbsp (water, for mixing with cornstarch)
1 tbsp gelatin powder
¼ cup cold water, for dissolving gelatin
