The key is to put this in a COLD oven to bake. Fill a pie plate or baking dish with boiling water in the bottom of your oven. Put your loaves in the oven with the steam rising from the boiling water dish, and close the door. Set it to 400°, for 40 minutes. Do not open the oven door! It will work! It will preheat (the dough will rise a bit during this) and then bake.
But I’m starting at the end.
To a bowl add:
2 Tbsp instant yeast
2 Tbsp honey or sugar
2 Tbsp olive oil (optional)
5-6 cups bread flour, or combination of whole wheat/all purpose flour. Start with 5 adding more as needed if it’s too wet when you start to knead it.
2 cups warm to hot water (not boiling!) water
1 Tbsp kosher salt
*optional seeds for stuffing or sprinkling
Add the ingredients to a large bowl or kitchen aid with dough hook.
Mix together so nothing gets stuck on the bottom.
Then knead for 5-10min. It should come together in a ball, if it’s too wet add more flour, too dry add more water or oil.
Coat the bowl with oil, put a damp towel over the top and let it rise in a warm place for 15 minutes.
Punch it down, divide it in half.
Make a round ball, or a small cylinder for a load pan.
Score the top with a knife and sprinkle on more seeds, as desired.
Bake as above!
You can check the temperature of the bread after 40 min, it may need up to 45min but it’s pretty much always done. The internal temp should be 190-200° or at least that’s what they say.
