They are fun to make when family or friends are involved, you can make the filling ahead of time to make the process easier and always delicious when eaten freshly made or toasted on your comal days later and topped with your favorite salsa. ❤

□ Meat shredder claws (affiliate)

INGREDIENTS FOR MEAT
3.25 lb. pork butt (with bone)
1/2 tsp peppercorns
2 bay leaves
1/2 medium onion
2 tsp salt (to your liking)
3 garlic cloves (smashed)
2 quarts water (enough to cover well)

RED CHILI SAUCE
3/4 TSP whole cumin
3/4 tsp peppercorns
3 big garlic cloves
4 chili ancho
7 chili guajillo
1 &1/2 C. pork broth (correction from video)
1/4 small onion
1/2 tsp oregano
1 &1/2 tsp chicken bouillon
salt as needed

MASA
3 LB masa for tamales (NOT PREPARED)
2 1/4 C. pork rendered fat
slightly melted smooth (not hot)
1 tsp salt
1 & 3/4 C.pork broth
1/3 C. red chili sauce (you decide)
1 bag corn husk (washed clean) you decide amount

CAUTION WHEN COOKING TAMALES ON STOVE, STEAM WILL BE VERY HOT1
KEEP CHILDREN AWAY FROM STOVE.

This brings back a lot of good memories. I worked for a Mexican family at their restaurant for almost 7 years. Twice a year, we would close the restaurant on a Sunday, and everyone and their families would come, and we would make Tomales. We would be cooking for 2 days ahead of time and feed everyone. When I would make Chili Colorado, I would make extra sauce, and we used that as the Tomale sauce. It's nice to see how to make actual Tomale sauce.

As an African American male, married to a Mexican Lady for more than thirty years, I've always had to wait for Christmas, and other traditional holidays to get "GOOD" tamales. Not anymore. I have the pork butt roast in my freezer, and was wondering what I was going to do with it. NOW I KNOW 😂😂 😂.

I’m 74 years old, was born and raised in Mercedes Texas. My mom used to make tamales. She always grinding the meat with a grinder on the attach to the table. It took me many years to make my own tamales, but follow me some of your instructions I took the very good point which all of them were very good and made my own thank you so much.

Hi Rachel, I'm 73 and, for the first time, made tamales with my brother. We followed your recipe, omitting the cumin in the red sauce. They were so good. Thank you so much for this delicious recipe. My name is Dan and I am 64. This evening I decided to make flour tortillas for my 96 y/o Aunt.
I found a recipe and used it however, your video came on for making Pork tamales. I couldn’t pull myself away from your video. You touched me in such a nice way. I lost my Mother to cancer several years ago, but you’re kindness and personality reminded my so much of my Mother. You have such passion with your cooking and I can tell you have a huge heart. I don’t know if you have children, but if you do, I hope they know how blessed they are to have you as a mother! I find you so amazing and I have a feeling you can touch anyone.

I just watched your pork tamales video! I feel like I was transported back to my home town in Laredo, Texas. You comments with things your mom says to you and you say them in Spanish warms my heart with memories. I don’t have my mother anymore. I lost mom this year in February. But, I could here my mother saying, “eso ya es mucho”. I am now a subscriber. I cook and bake and they are my passion as you love to bake and cook. Culturally I believe that is in our genes. Rachel, I made your pork tamales for Christmas and everyone raved about them. I was told by more than 3 adults at my small dinner that they were the best tamales they ever tasted. Another one said, "They were the bomb".

I am a chef, but I've never made tamales before. I searched for recipe videos and saw that this one was an hour long...EXACTLY what I wanted for the detail. I watched the entire video all the way through because I didn't want to miss anything. All the anecdotal tidbits and suggestions are awesome. I live in Houston, and I have friends who make authentic homemade tamales, but many of them are not very satisfying. Your suggestion to bulk up the meat to make them fuller is the best thing ever! Rachel, My husband and I were missing my mother-in-law's tamales. It's been almost 3 years since she has passed. I am so thankful I found you on YouTube. Rachel, you are an excellent teacher! It is one thing to write a recipe and to film yourself making the dish, but the detailed instruction and specific type of ingredients and specific steps for every dish is simply fantastic and it guarantees you (and me too) will make a superb dish every time!
