Hello my beautiful fam!! Welcome back to my kitchen first of all I want to thank you for being part of our family, and allowing me to be part of yours!!!! ❤️
Today I’m going to be sharing with you how to make the best red pork tamales ever!!!! Seriously I tried many tamales and this recipe continues to be the best!!!! Making tamales is time consuming but it’s seriously so easy to make them!!! Using a stand mixer makes this recipe so much easy! But if you don’ have one, you can use a handmixer or your bare hands, but let me tell you be ready to get a good arm workout! Because it does take a good time (30-1hr) to get the masa to perfection ! Mixing is very important because It allows all the ingredients to get well incorporated 😅 when we make tamales my dad is the one that mixes the mása because it requires a lot of work! Regardless if you mix by hand of mixer the masa HAS to float, that’s how your masa talks to you and let’s you know that the consistency is perfect!! Don’t skip it yessss you can make your tamales with out your masa floating but you will need a sip of soda after each bite, yesss coke and tamales are the best combination but you still want to be able to enjoy the tamal 😉

Tip: make sure your masa floats, that’s how you know you have the best masa for tamales 😊😉 if your masa don’t float add a little more liquid then keep mixing for another 5 minutes 😉
Another tip: try to build a pyramid with the tamales rather than standing them up I learned when you do the the filling goes down making the top of the tamal skinny with no masa or filling
You can use any cut of pork just make are to remove most of the fat as for pork is already fatty!

I forgot to mention, but please strain the chile sauce 😊

Ingredients: makes 35-40 tamales
Masa:
6 cups Instant corn masa for tamales
6 cups pork broth
1 1/2 cup lard
5 tsp baking powder
Red chile filling:
20 New Mexico Chile pods or guajillo New Mexico red bag is my favorite !!!!
3 chile ancho
12 tomatillos
7 garlic cloves
1 1/2 tsp whole cumin
1 tsp Salt 1 tbsp chicken bouillon
Meat:
5 lbs pork shoulder
1 onion
1 head of garlic
4 bay leaves
2 tsp whole black pepper
2 tsp all spice
2 tbsp salt 1-2 tbsp chicken bouillon
5 whole cloves
16 cups water
1 serving of love 💕

We were so poor in the 50s if it weren't for tamales we wouldn't have had nothing to unwrap, no kidding. You cook them just like grandma. She also made sweet tamales. Blessings

So I actually learned how to make tamales by watching this.. everybody in my house didn't think I could do it but I did and they loved them. It took me hours to do them but worth it.

Okay let me just say that since I got married I have cooked only your recipes and every time on my first try it comes out PERFECT! I finally tried to make your tamales de puerco and the rajas one and OMG they were so good, I shared with my family since it came out too many but they all loved it! I can’t believe they came out perfect on my first try !

After watching loads of your videos, I made these tamales last night with a few changes on my part (chicken instead of pork, red sauce using California chili powder, etc.), and omg...they were the absolute best tamales I've ever made in my life! I learned years ago from an ex MIL how to make them and I've actually been doing it for a lot of years (with hits and misses, lol), but the way you do it is just a little different such as...mixing a cup of the sauce in with the broth for the masa and mixing one cup at a time, whipping the lard and adding the baking soda, and the biggest one of all for me was lining the bottom and top with a layer of husks- omg Claudia, no leaks from anything and they looked exactly like they did when I put them in except they were cooked, lol! Your mom and grandma taught you well, you are amazing at what you do and I love your channel :)

Hi Claudia, I wanted to thank you for these amazing tamales! A year ago, on Christmas Eve, my dad got sick and died a few days later. Needless to say, this first Christmas without him was going to be really difficult for us. I lived in the California Central Valley for several years and had a bunch of friends who would make tamales for Christmastime, so we decided to start a new Christmas tradition with our family. I used your recipe and they were incredible! Our whole family was able to enjoy them and for some reason, good food always seems to help make difficult times a little less difficult. This recipe was delicious. I made tamales for my family and they all loved these pork tamales the sauce is an amazing taste and when tamales were ready I tried one before serving and the tamal tasted so goood the sauce was very good. Your recipe is as close to my Grandma's that I've ever seen, except she used less meat and she didn't use maseca. She always bought masa fresh from the molinero. Two things she always said (and I can tell yours would pass the first) #1, you should be able to see light through the masa after you spread it on the hoja, and #2, no one was allowed to gossip at her tamalada, or she said the tamales wouldn't turn out good! Thanks Claudia for another amazing dish!

I like the amount of filling you put inside. If there is one thing I don’t like about tamales, it’s when it’s almost all massa and no filling! They look great.

These are pretty good! I’ve made them 3+ times and they’re a hit every time. Here are some things I’ve changed after making them the first time:

1. Add WAYYY less whole cumin. It’s so strong and overpowering. I would start off with 1/2 tsp. (I only use 1/2 tsp)

2. I add 1 Large Roma Tomato to the sauce.

3. I add Chiles Japoneses to the sauce to make it a little spicy. I usually add 8+ Chiles, but start with less just incase.

4. I recommend 5 garlic cloves instead of 7, it’s really strong, but really… add a few at a time and taste! If you need more just blend more.

I’m not picky, but the first time I made these tamales I added all of the cumin and was not a fan of it. It was super strong. I had to adjust all the ingredients.
