3.5 lbs pork shoulder roast
Salt and black pepper, generous
10 cups of water
1 head garlic
1 ea white onion
1/2 ea bunch cilantro

☞ Green sauce
1 lb tomatillos
4 ea poblanos
2 ea jalapeños
1/2 ea onion
6 ea garlic cloves
1/2 bunch cilantro
3 cups pork broth, warm
2 ea TBSP avocado oil

☞ Masa Dough
2 1/2 tsp kosher salt
1 cup avocado oil
2 cup of green sauce - reserved
2 cups pork broth, warm

10 cups water to the pot - for cooking

Loved this video. Thank You. Wishing I could fit this in our Tamalada but we would still have to make an equal amount of our traditional red ones and we are running out of steam ( 80 years old ). Already planning on making chicken and chili, cheese and chili, beef, red pork and a small batch of sweet ones . I would appreciate seeing this process done with a Kitchenaid mixer and possibly using fresh masa. You create great videos, ! I can taste it and am inspired by it.
Our mercado bought fresh masa ( not masa preparado ) only allows for the addition of a small quantity of additional liquid getting to the float stage. Any ideas on whether or not it can be seasoned with chili. ?
