Tuscan Bean Soup
Ingredients for about 8 servings
2 tablespoons olive oil
1 large onion, roughly diced
2-3 celery stalks, sliced
3 medium carrots, sliced
½ teaspoon salt or to taste
2-3 cloves of garlic, roughly diced
Grinds of black pepper – ¼ teaspoon or to taste
2 15.5-ounce cans cannellini beans, drained and rinsed
4 cups chicken (or vegetable) stock
1 teaspoon Italian seasoning
Baby arugula leaves -- 4 handfuls (about 4 cups)

Hi Kevin. Boy oh boy, you and I send ourselves flowers and splurge on the best olive oil for our B-Days! Its ALL good :-) That soup is perfect for this frigid New England weather. My Fox must enjoy coming home to a set table and a comforting meal. My career was corporate and most days I didn't take the time to eat. To come home to a wonderful meal at the end of the day, doesn't get any better than that! ~ Diane

I cannot believe I missed this video or at least giving you a thumbs up.

Making this exact soup today but adding 1 lb of spicy Italian sausage cooking until the sausage is brown, then sweated the mirepoix and also keeping the bean liquid. Will serve with toasted cheese topped foccacia and Chardonnay.

I didn't know you could freeze celery. I always end up with more than I need and it goes bad. I will now dice it and freeze it. Thank you for enlightening me!
