Zucchini Fritters

ZUCCHINI CORN FRITTERS! Crispy, cheesy, and what to make with your extra zucchini!

When your garden gives you too much zucchini, these crispy fritters are the answer! Made with fresh zucchini, corn, and green onions, they’re perfectly golden with melty cheese and crispy outsides. Great for dipping in Greek yogurt or topping with a fried egg for a quick, healthy lunch.

YOU’LL NEED
-5 c shredded zucchini (about 3 medium)
-Kernels from 1 ear of corn
-3 green onions, finely chopped
-3 large eggs, lightly beaten
-½ c Italian seasoned whole wheat breadcrumbs
-⅓ c white whole wheat flour
-1 ½ tsp dried basil
-1 tsp garlic powder
-1 tsp kosher salt, plus more for serving
-½ tsp ground black pepper
-1 tsp baking soda
-Zest of 1 small lemon
-½ c freshly grated melty cheese (cheddar, mozzarella, havarti, etc)
-1-2 T olive oil for frying

Mix everything together, then fry in batches until golden. Serve warm with a squeeze of lemon, Greek yogurt, and chives. Enjoy!
