I ordered some silicone dehydrator mats and they are perfect for fruit leather! It peels right off and the sheets rolls up wonderfully.

We used to dry fruit leather outside in the sun on a hot dry day, stuck some plastic sheets (the kind you cover books with) to the kitchen table and just spread it out (sometimes had to cover with some thin netting to keep bugs away). It would dry to a leather consistency in a day. We just spread it all over and cut into strips when it was done, pulled them off plastic like a sticker and then rolled them up

Carolyn, SO glad I watched this video. I love butternut squash used in place of the pumpkin puree. I have made leather, but it never peels off well. I think making the cookie shape will really help. Seeing your makes me inspired and I think I will try putting the sauce in an icing bag. I am a messy cook and that might make the cookies a little neater. Also, love the look and taste of the coconut. Merry Christmas

I'm not a big fan of shredded coconut, I think it's the texture, but I was thinking using very thinly sliced pieces of apples or pears layed on top, maybe even some raisins. Or even some lightly ground toasted pumpkin seeds for a little crunch.

So glad I subscribed to your emails or I would not have known about this recipe. Question: I don't have fresh pumpkins but I do have a stockpile of pure pumpkin puree getting near its expiration date. Do I have to cook this in the oven prior to doing this recipe? Thank you in advance!
