It turns out that eating beet is a simple and pretty ingenious way to test your stomach health.

The reason this colorful vegetable leaves traces of its pigment in your urine is because the pigment is sensitive to oxidative degradation under highly acidic conditions.

In other words, the healthier your digestive tract is, the less likely you're to find pigment in your urine after eating beet.

Although beet pigmentation is usually not a cause for concern and will resolve on its own, red or pink urine after eating beets can sometimes indicate health problems. Therefore, you should see a doctor if your urine is discolored after eating beets.
