Looking for a tasty Tex-Mex dish to spice up your next party or gathering? Look no further than Chile con queso! Originating in the northern Mexican state of Chihuahua, this creamy, smooth sauce is made from a blend of melted cheeses like Velveeta, Monterey Jack, or cream cheese, mixed with cream and chili peppers.

At many Tex-Mex restaurants, chile con queso is served with added ingredients like pico de gallo, black beans, guacamole, and ground beef or pork. This warm dish is typically served with tortilla chips or pita chips and can also be used as a condiment on fajitas, tacos, enchiladas, and more.

While chips and salsa are often complimentary, queso is usually an additional charge. Don't confuse chile con queso with "cheese dip," which is specifically cheese without the peppers. Whether you're a spice lover or just looking to try something new, Chile con queso is a must-try for anyone who loves Tex-Mex cuisine!

I think that I would love queso dip with ground beef in it! ^_^ My older sister makes it with Rotel Diced Tomatoes and Green Chilies, and a block of Velveeta cheese! :D <3

You can also use sodium phosphate/citrate for emulsification. If you don't have it, just add some processed cheese - it has enough of it to effectively emulsify your ordinary cheese!

I love this recipe when I found it on meat Church's YouTube channel a long time ago but making it ever since and I would suggest use cream of mushroom soup like meat church did it's way better!

Gouda is redundant if you are already using processed "Cheese" which already checks the "Melt" box.

I want to believe maybe the cheese could have been a better quality. Velveeta?? Come on...
