thanks a lot for the recipe! what is the temperature of the mousse when we glaze it? should it be extremely frozen like -10 degree celcius or .. ? as i tried mirror glaze before, right after i am done pouring the glaze to the frozen mousse, it was fine. but after 30 minutes in the chiller, the glaze starts to completely slide off from the mousse :( thanks in advance for your answer!
