In this video, we're going to show you how to make a neutral mirror glaze that doesn't require any baking and doesn't leave any bubbles. This recipe is easy to follow and doesn't require any special skills.
Ingredients:
160 ml - water
75 ml - glucose syrup
6 g - lemon juice
230 g + 30 g - sugar
7 g - NH pectin
Instructions:
1) mix 30 g sugar and 7 g pectin
2) pour into hot water at about 50°C (122°F)
3) add the remaining 230 g sugar and 75 ml glucose
4) heat up to 90°C (194°F) then add 5 g lemon juice
5) bring it to boil at around 104°C (220°F)
6) transfer to glass container and leave it to cool
7) take away the bubbles from the surface
8) cool and keep in the fridge
