The jamón bit was hilarious, but, for reference, you’re supposed to “peel” the outer fat layer like you would an orange skin and keep it. Then, once you’re done slicing as much jamón as you can eat, use that same fat to cover the opened ham before you put it back in the sack. This will keep it fresh for longer, and prevent it from drying out. Also, this is general advice in case anybody decides to get one of those jamón cutting devices, using a chainmail glove is always recommended, because those knives are sharp and your non-dominant hand has to go in a vulnerable position to keep hold of the jamón as you slice it.
