"Chasseur" means "hunter" in French, as the dish was traditionally made with game birds and foraged mushrooms. Ingredients
For the Chicken:
• 4 bone-in, skin-on chicken thighs (or a mix of thighs and drumsticks)
• 1 tbsp (15g) olive oil
• 1 tbsp (15g) butter
• Salt and black pepper, to taste
• 2 tbsp (15g) all-purpose flour (for dusting)
For the Sauce:
• 1 tbsp (15g) butter
• 1 shallot or ½ small onion, finely chopped
• 2 cloves garlic, minced
• 150g (5 oz) mushrooms, sliced minimum I use 250g
• 120ml (½ cup) white wine (dry, such as Sauvignon Blanc)
• 240ml (1 cup) chicken stock
• 1 tbsp (15g) tomato paste
• 200g (7 oz) chopped tomatoes (fresh or canned)
• 1 tsp (5g) Worcestershire sauce (optional, for depth)
• 1 tsp (5g) Dijon mustard
• 1 tsp (5g) sugar (optional, to balance acidity)
• 1 sprig thyme (or ½ tsp dried thyme)
• 1 sprig of tarragon (optional)
• 1 bay leaf
• 2 tbsp (30g) chopped fresh parsley (for garnish)

Yummy! Hi from Australia. Love chicken thighs but usually only use them in soup, casseroles etc as they have the most flavour. This is now on my list as chicken thighs are still quite reasonably priced here. Cheers

Bringing back the start from scratch classics, years gone by, the only way we could access these meals was via the cook in sauces! which i know are available today, but this is where it started! good job, classics as they should be!
