I've been learning sourdough bread baking from all the different YouTube bakers and i love those who do things by hand as i hv no stand mixer, i premix the dough by hand & since i hv an electric hand mixer i use the dough hook to mix the dough with recipes that have butter or other stuff s to mix with the dough properly, quite difficult to achieve the window pane thingy so when every thing is mixed smoothly i just stop from there cover n rest the dough for 30 minutes and give it at least 2-3 sets of stretch and fold 30 minutes apart and that solves the problem for me😊

Works better than stand mixers for high hydration doughs. The only issue is that they warm up the dough.

Wished I seen this before I bought that big clunky stand mixer with the double dough hook. The beater and the dough hooks in the video would definitely be space savers and looks like it would do an excellent job of kneading the dough. Thanks.

How do you place the hooks so the dough doesn't climb up into the mixer body??? I have not been able to make this happen, and have gummed up two mixers.
