COTTAGE CHEESE PANCAKES STUFFED WITH AN APPLE RIGHT IN THE CENTER. these are so yummy and the best way to up your oatmeal game. simply, cut an apple down the middle, cut out the core and dip in cottage cheese pancake batter for a sweet, tangy but most importantly high protein meal.

these taste great with a touch of powdered sugar and are best enjoyed dipper style with a bowl of maple syrup. HOPE YOU ENJOY!!! tag me if you try :)

1 cup cottage cheese, I used good culture!
2 large eggs
1 tsp vanilla extract
2 tbsp maple syrup (plus more for serving)
2 tbsp melted and cooled coconut oil
1/2 cup milk of choice
1 1/4 cup oat flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp all spice

In a blender, combine cottage cheese, eggs, vanilla, maple syrup, coconut oil and milk. Blend until smooth and creamy.

If making your own oat flour, blend oats in a blender for 60 seconds. Then add oat flour to a bowl with baking powder, cinnamon and all spice. Mix well and then add in wet ingredients.

Gently stir to combine and set aside.

Slice and apple and then core out the center with anything you have on hand. I used the cap of an aresol cooking spray!

Heat a non-stick skillet over medium heat, add on butter and then dip and coat each apple in the pancake batter using two forks. Place them on the greased skillet and cook on both sides about 1-2 minutes.

Enjoy warm with powdered sugar and maple syrup
