As a Mexican i can recommend that if you cannot find piloncillo you can just make a mixture of cane juice, brown sugar and molasses, piloncillo it’s the first state of sugar extraction

Check the label! You want piloncillo that is 100% sugar.

Goya sells piloncillo that contains the preservative potassium sorbate, which inhibits yeast activity.

I've made it a few times mate . It can get a reasonable alcohol strength . I've used cinnamon and clove and brown sugar . Nice .

Also, question. I save my amber colored kombucha bottles. I assume I can screw the lid on tight for this and reuse them? That’s why I started buying that brand of kombucha. That bottle can handle pressure and it’s amber glass; which is expensive as hell if you buy in bulk but I get kombucha fairly regularly so, I’m not spending what I wouldn’t have spent anyway. We’ll see.
