I love to save my pineapple skins to make this mexican drink called Tepache. 

Cinnamon

Ginger

Pineapple skins

1/2 cup brown sugar (Mexicans use piloncillo) 

Water

Cover it with a breathable mesh top. 

Ferment between 2-10 days it's ready when it doesn't taste too sweet

Strain it then bottle it up. My bottles are especially made for fermentation. 

Second ferment for 2-3 days. This is when carbonation happens, enjoy!

I buy the lemonade at Aldi in swing top bottles for $2.79. clean the bottle when I'm done and use it for tepache, water kefir, kombucha etc

THIS IS A GREAT IDEA! I love pineapple mango kombucha, but don't like to waste the pineapples, so I spend about 30 minutes skinning them. With this I wouldn't have to worry so much, because i can just make another drink. Lol

Hey there, I'm trying your recipe, I found after 2 days it has some bubbles formed, is that normal? And it does smells a little weird but it's not strong
