This week I want to show you how to make a modern Japanese breakfast with three easy breakfast toast ideas. My toast recipes include Japanese Egg Toast, Mentai Mayo Toast, and Ogura Toast. All you need is Japanese sandwich bread and a few basic ingredients like bacon, eggs, and mayonnaise.

1 slice sandwich bread (thick-cut)
2 tablespoons butter (divided)
120 grams anko (sweet red bean paste)

Mentai Mayo
1 slice sandwich bread (thick-cut)
25 grams mentai
2 tablespoons Japanese mayonnaise
nori (for garnish)

Bacon & Egg Toast
1 slice sandwich bread (thick-cut)
1 large egg
Japanese mayonnaise
1 slice bacon
salt & pepper (to taste)
1 scallion (for garnish)

So good! Made bacon (used cooked pancetta), egg and mayo toast today for lunch and it was delicious! The toasted mayo is such an unexpectedly yummy taste, my family could not guess what it was, but devoured it! Thank you Marc for another great recipe!

Beautiful video, Marc! All three looked so good, but I especially loved the Anko Toast. Butter and salt on anything makes it better, and Anko is wonderful just by itself! Now I have to go make some Anko.😉

The thickness of the bread reminds me of Texas toast, or Jewish egg bread, both traditionally thicker. Keep it up!

Hey there Marc it's been awhile since I've had Japanese anko so I'm going to follow your recipe on how to make it except I don't have a pressure cooker I'm going to make it on the stove like you make traditional beans I hope it comes out because I really love the sweet being paced but sometimes the stuff you get at the store it's either not sweet enough or it's too sweet anyways I'm going to try your recipe I'm going to make it and I want to make this toast cuz it really looks good I might make the other ones too but I really want the anko. Ogura toast would be great for quick desserts 🤤 tho' I'm thinking using french toast base. I'm usually only do my toast with nutella & mozzarella or tuna melt toast. I'm curious with mentai mayo toast, I'll do that the next time I buy mentai.

Hey Marc, do you think the mayonnaise is necessary for holding the egg in place for the egg toast? I really hate the stuff so I wouldn’t buy it for a recipe even if it doesn’t end up tasting like mayo. Will the egg run everywhere without it, or do you have any other suggestions? I’d like to pick up some thick white bread next time at the Korean bakery to try out some of these ideas!
