The moistest most amazing cinnamon apple loaf cake ever!

*Ingredients*
For the batter:
115g salted butter, softened
130g granulated sugar
2 large eggs, room temperature
1tsp vanilla
180g self raising flour
120ml milk

For the apple filling:
3 medium apples, peeled & diced
2tbsp granulated sugar
1tsp cinnamon

For flavouring:
60g light brown sugar
1tsp cinnamon

For the glaze:
100g icing sugar
2tbsp milk

1) Preheat your oven to 180°C/ Gas Mark 4/ 160°C (fan)

2) Line a 3lb loaf tin with baking paper.

3) For the batter, whisk together the butter and sugar in a large bowl until light and fluffy.

4) Add the eggs and vanilla, then whisk until fully combined.

5) Add the flour and fold it in.

6) Add the milk and whisk until smooth.

7) Scoop half of the mix into the loaf tin and level it out.

8) For the apple filling, coat the diced apples with the sugar and cinnamon in a separate bowl.

9) Sprinkle half of the diced apples into the loaf tin and level it out.

10) For flavouring, mix together the sugar and cinnamon in a medium sized bowl, then sprinkle half of it in the loaf tin.

11) Add the rest of the batter and level it out.

12) Add the remaining apple chunks and level it out once more.

13) Sprinkle the rest of the sugar mix over the top.

14) Bake for 50-60 minutes, until a toothpick comes out mostly clean.

15) For the glaze, add the icing sugar and milk to a jug and mix until smooth.

16) Drizzle the glaze over the cake.

17) Enjoy!

CAKE -
1/2 cup (115g) salted butter, softened
2/3 cup (130g) granulated sugar

- whisk until light & fluffy

2 eggs
1 tps vanilla extract

- whisk till fully combined

1 cup (180g) self rising flour

- fold it in


1/2 cup (120ml) of any milk

- whisk until smooth

APPLES -
3 medium sized apples diced
1 tsp cinnamon
2 tbsp granulated sugar

pour half of cake loaf batter in
put half of diced apples on top
sprinkle some cinnamon sugar mixture
repeat once more and bam!

bake for 50-60 minutes until toothpick comes out mostly clean :)
