Thank you so much for sharing. I was looking for a way to have flavor yet not add the meat. I add similar seasoning too like the red pepper flakes. Gives it that kick. I've always used liquid smoke in my black-eyed peas didn't know why I never thought to add it to my greens. Well off to the kitchen to make my greens today. Have a great day!

Let me first say that I appreciate the video. I have a suggestion or two for people like me who are viewing to learn. It would be helpful if you listed a recipe of ingredients and measurements. I may guess and say you were working with about 2 lbs of greens, but it would be nice to be given that info. The remainder for the demonstration was great. Keep up the good work.

Nice. Not counting the labor involved in growing collards, the hardest part of cooking them is washing them and cutting the leaves into "bite-sized" pieces. I do not discard the stems. I find that I can get collards very soft by cooking them anywhere from 1/2 hour to 2 hours, depending upon the particular cultivar. I haven't been able to _buy_ collards that cook to soft in less than about 50 minutes but some years ago when I had a garden I grew a variety that took only 30 minutes to cook. Got the seeds from a small company, not from one of the big seed companies. Don't remember the name of the company or the cultivar offhand; I would have to look it up – but not only did these take only 30 minutes to cook, but they were also the tastiest collards I ever tasted. Nowadays I buy a 3-pound bunch and, after cooking them, I wind up with 6 to 8 pint-sized containers – and I freeze most of these. I was surprised to learn that when compared with each other at the same level of hydration, collards have almost as much protein per unit of weight as soybeans do. No kidding! Don't just take my word for it; check the United States Department of Agriculture Nutrition Database. Looked at the amounts, did a little arithmetic – that's what I found out. Collards are my favorite cruciferous vegetable. I have a vegan recipe that I ought to post on youtube.

It would also be nice to finish the dish to completion. Just don't tell us what to do, but let us see you do it as well. I am making reference toward the end when you tell us to add vinegar and oil at the end but you don't do it. When duplicating recipes online, we want our dish to taste exactly how yours tastes. Otherwise, we’ll question ourselves if we did it right. Oh, yeah, measurements are a must!
