1. Begin by preheating the oven to 350°F.
2. Prepare a baking sheet by lining it with parchment paper or a silicone baking mat, then set aside.
3. In the bowl of a stand mixer, or using an electric hand mixer, cream together the softened butter and sugar until well combined.
4. Scrape the side of the bowl with a spatula to ensure all I are in the mixture.
5. Then add in the egg yolk, corn syrup, vanilla, and continue to mix until combined.
6. Add the flour, baking Soda, salt and mix until the dough forms.
7. Divide the dough into 6 equal portions and roll each into a ball, then place on your prepared baking sheet.
8. Bake in the preheated oven for 7-9 minutes, or until the center of the cookie no longer look wet and glossy.
9. Allow the cookies to cool completely on the pan.
10. *ENJOY*
11. Store your cookies in an airtight container at room temperature for up to 3 days.

Just made these and doubled the recipe for a bigger batch. Thankgully I did because I ate 6 in less than a minute. 😅 so very good. Glad I'll have some left for breakfast.

Used allulose syrup. Worked fine. I just can’t use corn syrup. Cookies are perfect. Thank you.❤

These are so good. They came out beautifully. Thank you for sharing. Yes, they were the 1 AM answer 🤭. I used lemon extract instead of vanilla. Honestly, any flavor would hit.

I would suggest a teaspoon or maybe half a teaspoon of corn starch for a chewy and soft cookie
