Liquorice steak? Like the salty kind, or you could try both, maybe the sweet taste fits well, or then the salty taste gives it better flavor. Also it's basically made from ammonium salt if i remember right so you could maybe do something with that as well.

If you guys want a really good seasoning for pulled pork shoulder
2 tablespoons pepper
2 tablespoons salt
2 tablespoons garlic and onion powe
2 Tablespoons Paprika
1 cup coffee grounds
1 cup brown sugar.
I suggest you adjust to taste and use mustard as a binder
