this explains why my rolls did not rise!!! I proofed the instant yeast and it didn’t rise at all.. I did 2 batches with the same results.. Wish I would have found your video sooner, but now that I understand the difference I’m gonna give it another try! Thank you, !

I still don't get it, so if I use the instant dry yeast, I no longer have to add warm milk and sugar to the mix?

Very helpful video! I kept seeing that you need to use 25% less instant when swapping for active dry which honestly just kept confusing me. Going to stick to your recommendation of 1-1 from now on- I figured it wouldn’t make thattt much of a difference anyway 😆
