After two wasted batches of dough, I'm glad I have an answer to why this one isn't working like my previous recipes! Thanks! My partner picked up this fast yeast and I thought that it couldn't possibly make much of a difference but I was starting to get suspicious after a lot of frustration 😂😂

Thank you! If I use active dry yeast, then do I need to use sugar to activate it? Or, can I just put the active dry yeast in warm water without sugar to dissolve the yeast? I made pizza the other day, and the recipe calls for instant yeast, but I used dry yeast. I put the dry yeast into warm water at 110F to dissolve it. Then, I pour the water into my mixture. I didn't wait until my dough rose because the recipe didn't call for letting the dough rise. It still tasted really good. If the only purpose of putting sugar into the water is to check if it is alive or good, then I guess I won't really use sugar. However, I did add sugar to the flour.

If the recipe calls for active dry, and all you have is instant, and you have to substitute, is it equal amounts, or would you need less/more of one yeast over the other?

Good advice. Bakers have to always be willing to have a 'less than perfect' result when changing ingredients. My Mother used to say that 'practice makes it perfect' and that certainly applies to baking.

Hi, I come across a few recipe saying “dry” yeast, then what would that be? I’m a newbie and just bought instant yeast. Could I use this?

When i was a chef at the restaurant we only ever used Instant Yeast, Because i have loads of it since it comes by the pound, I've always used that instead of anything else. I never noticed a difference, even the idea that yeast can't be added to ice water directly isn't really accurate. All these years later i decided to see if there is actually any difference, which from what i can see other than rising times (which is going to be different for every yeast anyway) there really isn't any. Is there any concept like Instant is better than active yeast or active is healthier than instant etc - or is it just whichever is needed for that particular recipe is good enough ?
