I like to use active dry yeast because I can be sure that the yeast is still alive. I think the extra 5-10 minutes helps me to avoid wasting other ingredients (if the yeast is dead). But, if you bake all the time, then I guess instant yeast is great.

You can freeze the fresh yeast. In Poland we do it pretty much always when we have some left over and it's doesn't go bad! Dry yeast is really hard to find here and if it is it's really expensive in compatasent to fresh yeast.

In europe fresh yeast is actualy more avaiable than the dry, ive had problems with the dry stuff too, my yeast was super dead so i prefer fresh yeast all the way

We always buy fresh yeast but we live in Denmark so it's harder to get dry yeast. Yeast in Danish is gær

I prefer my Rye yeast that got passed down from my grandmother, it bake the perfect loaf and can bake all kind of bread with the right recipe, the starter is more than 50years old, the flavour and the strength it give is unbelievable

We have the same brand of instant yeast in France, it has the same packaging too. It's also very common in north Africa Morocco Algeria and Tunisia. I use it to make Baghrir, my favourite crepe ever. Its excellent with orange blossom water, hunny and butter. You should try it!

My mom always used fresh yeast and I still do. It’s cheap and def not rare where I’m from

I keep fresh yeast in the fridge for months.. advantage is that it taste better .. however much you use it won’t start tasting dusty like dry yeast .. 1 euro for a huge dollop at the bakery

They sell fresh yeast at every grocery store in Sweden. Two kinds. One for sweet baking and one for bread

I never had active dry yeast because it's just unavailable here, we only get instant but seeing as where I come from fresh yeast is the default, I assure you - IT'S ABSOLUTELY WORTH THE TROUBLE XD Yeast cake on fresh yeast is just plain better ;)

Sometimes i use sourdough starter, which requires no adding yeast! Just flour and water and eventually you have a lovely fermented starter.

You can freeze fresh yeast; if portioned out prior to freezing works just fine although I use all three including sourdough starter; it depends on the purpose!🌟

Seen a blogger use active dry yeast where they mix it into flour and add liquids later instead of blooming
Having tried a few recipes can say it does work and separate blooming is not actually always necessary

In my opinion, if you bake bread alot (like me haha) I recommend using fresh yeast, might be kinda tricky, and it's rare, but it gives you that fresh yeast flavour that I LOVE, and also it's very mushy and soft

I've tried making the quick breads and they don't give off that freshly baked bread smell. Do you have an easy recipe that will fill my house with that warm homemade bread smell? Preferably a recipe with no kneading please.

There is also natural yeast which people use to make sour dough. It all comes to usage and technique, instant yeast doesn’t really that much fermentation flavor compared to the other yeast

Fresh yeast is hard to get in the US? I usually get in bakeries cause its cheaper and it gives the bread a sourdough flavor if you leave it out long enough

As a German, hearing „fresh yeast is rare“ kinda threw me off a little. You get it in every supermarket here, even really small ones.

Unless it is newly opened. I try to check yeast. Even instant yeast to make sure it is active.
