Here is a delicious Blue Zone Recipe that is popular in Sardinia Italy, where it is common to live over 100 years old. Blue Zone areas have the highest percentage of centenarians, so mimicking their diet and lifestyle can only “up” our chances of longevity.
You can use canned beans OR dry and soak them over night! I personally just used the canned beans so the recipe was less intimidating first time making it. Make sure you rinse beans if they are canned before adding to pot.
Ingredients:

¼ cup red beans, dried or canned
¼ cup chickpeas, dried or canned
¼ cup dried fava beans
¼ cup lentils
2 large potatoes, peeled and cut into 1-inch cubes
1 onion, chopped
1 bunch beet or Swiss chard leaves
2 fennel bulbs and stalks, washed and chopped
1 fresh tomato
2 garlic cloves
1 stalk celery, chopped
2 cups cubed pumpkin or other squash (zucchini, yellow, butternut, acorn)
4 to 5 stalks wild garlic, garlic scapes, or garlic chives
¼ cup fregula pasta
3 quarts water

Add all ingredients to pot and cook on low for a few hours to preserve nutrients more; or just boil on medium and cook for 40 min to an hour. (The longer the better) the full recipe is in the Blue Zone Kitchen cookbook. It’s one of my favorite healthy cookbooks I recommend getting it!
