⭐️ Breaded eggplant is an easy and tasty recipe you can enjoy as an appetizer, side, or main dish on top of pasta with a few spoonfuls of our delicious marinara sauce.

⭐️ Ingredients
2 medium eggplants about 2 pounds or 1 kilogram
⅔ cup (100g) chickpea flour mixed with ⅔ cup (160g) water
⅔ cup (100 grams) breadcrumbs
2 teaspoons Italian herb mix
1 teaspoon garlic powder
¼ cup (25 grams) parmesan cheese sub vegan cheese
1 teaspoon salt
¼ teaspoon black pepper
2 tablespoons extra virgin olive oil
SERVING SUGGESTIONS
marinara sauce
tzatziki sauce

I don't have chickpea flour so I used whole wheat flour but it was delicious soft inside and crispy outside. I also add sesame seeds 😋 thank you

Wow. I love it. I often want eggplant, but am not always in the mood for an dll veggie meal. So, the bread crumbs are an awesome addition. Can I use eggs for the batter if I don't have chickpea flour in the pantry?
