Steve, you did it the right way most people get the water to a rolling boil, and mess it up. I’ve made a lot of poached eggs in my life working in restaurants. It is a very easy thing to get wrong. I really enjoyed this video. Take care brother

I tend to crack the egg into a sieve and don't add salt to the water which seems to prevent the whispy white albumen forming on the surface of the water.

I saw a method over at Kenji's channel which kinda helps with the excess in stringy whites: just quickly run the egg through a metal strainer to remove the excess "water" from the egg white, right before tossing it in the hot water. I tried it, and the result is a little cleaner. Cheers!

You should really look up Heston Blumenthal's method for poaching eggs: Remove the liquid white using a round-bottomed fine mesh strainer, and then lower the strainer into the simmering water. You can twist it back out and repeat the process, cooking many eggs at once. Get them out with a slotted spoon. No need for a vortex, no wispy whites, no ramekins to clean.
