Like Phil, I only know 4 flavors including sweet, salty, sour and bitter. But now I know we have the fifth flavor which is umami. It is also the first time I have heard about it.

I think most people don't like bitter food bcz it doesn't taste delicious. However, many research found a remarkable link between bitter food and its benefits for health like it suppresses hunger feeling, controls over glucose release, and it has an incredible ability to interact with our microbiomes to make the digestive process easier.I thought that we don't used to eat any kind of bitter food anymore, but it turns out that there are mainstream bitter food. For instance, coffee and chocolate.
