Easy No Bake Cheesecake | Blueberry Lemon Icebox Cake
This Blueberry Lemon Icebox Cake is so refreshing and creamy. In this video I will show you how to make this easy no bake Blueberry Lemon Cheesecake. No bake cakes bring back summertime memories of my childhood. This is a variation of cheesecake that is sure to please on a hot, summer day. Lemon recipes just scream summer delight and blueberries are the perfect pairing for this refreshing dessert! Easy summer desserts that don't require an oven is always a win.
My kids Favorite summer drink is this Strawberry Cream Soda. It is so nice to have a refreshing and beautiful drink to cool you down from the summer heat. Recipes:
Blueberry - Lemon Icebox Cake
8oz. Cream Cheese
3/4 cup Powdered Sugar
1/4 tsp. Vanilla
2 Tbsp. Grated Lemon Zest
2 - 1/2 cups Heavy Cream
3/4 cup Lemon Curd
Graham Crackers
1 jar Blueberry Jam
1 pint Fresh Blueberries
Line loaf pan with plastic wrap, leaving overhang. With an electric mixer, beat cream cheese, vanilla, zest and powdered sugar till fluffy, add cream, beat about 4 minutes or until thickened. Place 1/3 mixture in fridge for later. Add lemon curd to mixture.
Place graham crackers in a single layer of loaf pan. Evenly spread a 1/3 of lemon cream mixture, followed by 1/3 blueberry mix. Repeat, ending with lemon cream. Save remaining blueberry mix for later.
Freeze overnight or 6 hours minimum. Dip pan in hot water for a few seconds to loosen cake. Invert onto a plate. Frost outside with remaining cream mixture, top with remaining blueberry mix. Slice and enjoy! Store leftovers in freezer
Italian Cream Soda
Place fruit in a blender with a few tablespoons of sugar (depending how sweet you like your beverage). Puree and let set for 10 minutes. Place a few spoonfuls of fruit in a glass. Add ice, sparkling water, cream or coconut milk. Stir and enjoy!
