Chris, as usual, great looking recipe. The question I have is that is it ok/safe to cook in an aluminum pan with the Jerk Marinade? Thinking about chemical reaction. Thanks & keep up the great work.

Looks good Chris! I've done other jerk recipes in the oven but this w/e gotta try yours! I like the idea of cooking at 425 to simulate outdoor cooking. I'll let you know how everyone enjoys it! By the way, I made some peppersauce with the final harvest of our garden. Used mostly habaneros, jalapenos and chillies and it turned out perfect...good heat. Don't know if I could eat it with just scorpions, ghost and habaneros...:) Thanks.

What do you do with the left-over marination juices after the chicken is done? Can you reduce it in a pan and use it as a sauce?
