One of the best parts of this Lemon Chicken & Rice is the whole meal is cooked in a single pan. This dish is comforting, zesty, and savory. This Lemon Chicken & Rice is so easy to make. The marinade is loaded with fresh lemon which gives this whole meal an incredibly zesty flavor that blends perfectly with the savory rice.
INGREDIENTS
*Makes 4-5 servings
MARINADE
+ 2 lbs bone-in chicken thighs
+ 2 lemons, juiced + zest of one lemon
+ 3 cloves garlic, minced
+ 1 tsp dried oregano
+ 1/4 C fresh parsley
+ 1/2 tsp red pepper flakes
+ 1/4 C olive oil
RICE
+ 1 yellow onion
+ 2 cloves garlic, minced
+ 2 C chicken stock
+ 1 C white rice, uncooked
+ 1/2 tsp salt
+ 1/4 tsp black pepper
DIRECTIONS
+ STEP 1: MARINADE
Combine the lemon zest, lemon juice, garlic, oregano, parsley, red pepper flakes, and olive oil. Add the chicken and toss in the marinade. Then, marinate in the fridge for 2-4 hours, or at least 30 minutes.
+ STEP 2: SEAR
Once finished sear the chicken, skin-side down, in a large skillet until it gets golden brown and crispy. Then set aside.
+ STEP 3: RICE
Sautee the onion and garlic. Then add in the chicken stock, marinade, salt, pepper, and white rice. Bring to a simmer, then place the chicken on top of the rice
+ STEP 4: BAKE
Bake in the oven at 350°F covered for 30 minutes. Remove the lid and return to the oven for about 15 more minutes until the chicken is cooked through. The chicken is done when the internal temperature reaches 170°F.
+ STEP 5: SERVE
Squeeze fresh lemon juice over the whole dish and top with fresh chopped parsley.
