THAI RED CURRY PASTE FROM SCRATCH!

I learnt to make this GORGEOUS Thai red curry paste in Chiang Mai! Such a beautiful part in the north of Thailand. Stay tuned for the next 2 videos where I show you how to make a VEGETARIAN red curry, and a CHICKEN red curry!

Makes enough paste for 4 servings
Ingredients:
7-8 dried red chillies, soaked in water for 20 minutes and chopped (this is extra hot, use only 3-4 if you prefer a mild level of spice)
2 long red chillies, roughly chopped
1 red shallot, chopped
1 tsp chopped galangal
3-4 makrut lime leaves, stem removed and sliced (or use the skin of 1/2 makrut lime)
3 garlic cloves, finely chopped
1 tbsp chopped lemongrass, or lemongrass paste
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 tsp coarse salt

Method:
Place all ingredients in a mortar and pestle and pound for 20 minutes until a smooth paste. Alternatively, use a blender. You may need a few tablespoons of water to assist the blender.
