Since I actually use Thai Curry Paste occasionally it’s good to know how to make it fresh. So I enjoyed this and having an actual idea of how to make it. I’ve never heard of Galangal though, but I know ginger and this seemingly looks quite similar. So I’m curious to ask if their exist some version where you can add ginger with the galangal in some amount and how that would change the flavor taste. Or can you add ginger to the paste with no galangal. I’m curious to know either or, or all the above. Learning can be a bit enlightening when you just don’t know.

What are you using is not the shrimp paste used in Thai curry. Even though the label is "shrimp paste", it is actually "shrimp tomally".
Correct shrimp paste is the fermented shrimp paste made from krill and salt.
