If you want to know how I gauge a Chinese-American restaurant, it's all about the bowl of crunchy, crispy noodles they place in front of me alongside some duck sauce and hot mustard for dipping. If they're those tiny ones that taste baked and pre-packaged, I know they cheaped out and I will pout. But if they're those golden-brown thick ones that have the perfect crunch with a slight taste of oil seeped in, it will set the stage for a great meal to come! One of my favorite ways of using egg roll wrappers is to deep fry it whole and flat, drain it flat, and when cooled, place it on your plate and put your salad on top of it.
The fried egg roll wrapper is the crouton of the salad.

I’ve never in 74 years seen any noodles (including Chinese) that looked anything close to those. Not saying that there’s not any like that, just saying I’ve never seen him and I’ve eaten a ton of Chinese food.

I've made those for years, but I now use wonton wrappers so i don't have to cut them up.

What is your recommendation for Chinese Mustard? I have not found any store bought or recipie that is as good as the table mustard you get in a Chinese restaurant!
