Depends on what cover crop your doing and your carbon to nitrogen ratio, your also preventing erosion and secretion of carbon is important for soil health

It holds water, promotes biodiversity and hosts mycelium for mineral availability. This is a big reason organic food tastes better and soil improves.

Nope. Nature is pretty close to perfect, but not that perfect. The cover crop always uses more nutrients as it grows, than it returns to the soil, when it dies. If this guy was correct, I’d like to sell him my perpetual motion machine!
