How long to store Idli/Dosa Batter that has been fermented at home? This was one of the most frequent questions asked in last week's millet cooking challenge.

Fermentation is a process of 8-10 hours. Research shows that the nutrition value of calcium, iron, B-Vitamins, Protein, Fibre, etc reaches the highest at about 8-10 hours. It depends on the temperature/location of your house etc.

Post 10 hours, we make fresh idli's/dosa and the left over batter is generally stored it in the fridge intending to be consumed in the next 2 days.

However my personal experience is 

1. The batter gets sour and does not taste as good as the fresh one

2. Research studies also shows that the nutrition value starts declining post 10 hours. 

3. The idlis are also not as fluffy as the fresh batter since most of the air bubbles are gone when mixed.

So if you want to benefit from the max nutrition & taste, eat as fresh as possible. Avoid storing the batter for more than a day. That means you will have to plan your proportions wisely that its just enough for 1 meal :-)

But sometimes yes there is always some left over. In that case, try to finish it within the next day. But dont carry it on for more than 2 days.

We store/ preserve food/veggies by drying them or through cold storages like fridge, then why do we say that it should be eaten fresh.

I came to America marrying an engineer and working full time. My parents said what she is saying but my husband ate food few weeks old. Lol 😂 I thought I am living like a bikari in USA. But to my surprise we are much healthier and happier than many of our friends same age. Don’t fall too some BS in social media.

Not a Scientist, no sources of insurance. After 10 hours, the U235 percentage also goes down. Blah blah Blah.
