Best Side Dish, Green beans French Style

Green beans are one of the best side vegetable dishes you can make. They go with almost everything, from lamb racks, roast beef or chicken, even with fish. This method is the French way, which keeps the beans nice and green. You can pre-cook them in advance, even the day before and finish them off just before serving.

The beans are cooked with sliced shallots, this enhances the flavour without overpowering the actual meal. There’s no garlic, chili, nuts etc. It is a side dish after all, not a meal, therefore simplicity is best.

If you’re in a hurry, skip the cooling down part and add directly to pan once cooked. They won’t be as green but still as delicious.

You could also add a little lemon squeeze if you like. Enjoy green beans French style.

I made your exact recipe tonight for dinner. It was tasty. However, I didn't use shallots I just sautéed some yellow onions along with all your other techniques (cold water bath, return the beans to hot water, etc.) and it was vividly green and crisp, yet tender, flavorful and not oily at all. Also it was so quick to make. Will be doing this again. Thanks!

Your videos are always so beautiful to watch.
As a French I must admit we usually use shallots with peas rather Than green beans (we préfèr them with parsley and garlic, especially in south of France) but indeed shallot and butter go very very well with green beans too

Hey Joel, this is one of my best dish which I always made. All my friends love it. You can do same without onion 🧅 with garlic 🧄 as well. Garlic beans. 😋

I love cooking green beans this way I also add garlic and julienned sun dried tomatoes. Your beans are from your garden I presume, beautiful Joel. When I go to town today I’ll get a couple of lbs and we’ll have them with our beef stew, and your bean recipe. Winter has arrived we might get a dusting of snow.
