East Hampton Clam Chowder

Ingredients

12 tablespoons (1 1/2 sticks) unsalted butter, divided
2 cups chopped yellow onions (2 onions)
2 cups medium-diced celery (4 stalks)
2 cups medium-diced carrots (6 carrots)
4 cups peeled medium-diced boiling potatoes (8 potatoes)
1 1/2 teaspoons minced fresh thyme leaves (1/2 teaspoon dried)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 quart (4 cups) clam juice
1/2 cup all-purpose flour
2 cups milk
3 cups chopped fresh chowder clams (1 1/2 pounds shucked clams)

Directions

Melt 4 tablespoons (1/2 stick) of the butter in a large heavy-bottomed stockpot. Add the onions and cook over medium-low heat for 10 minutes, or until translucent. Add the celery, carrots, potatoes, thyme, salt, and pepper and saute for 10 more minutes. Add the clam juice, bring to a boil, and simmer, uncovered, until the vegetables are tender, about 20 minutes.

In a small pot, melt the remaining 8 tablespoons of butter and whisk in the flour. Cook over very low heat for 3 minutes, stirring constantly. Whisk in a cup of the hot broth and then pour this mixture back into the cooked vegetables. Simmer for a few minutes until the broth is thickened.

Add the milk and clams and heat gently for a few minutes to cook the clams. Taste for salt and pepper. Serve hot.

My best memories of watching this show and this woman was with my Mamaw when I was young. We would lay on the bed(She couldn't stand as much as her legs and knees were very weak) and would watch these shows, show me so many of these episodes and look at the recipes, telling me of we would cook this or cook that but we never did but we still enjoyed watching them and writing them down and the list of ingredients we needed. Talk about owning our own baking business or restaurant. Good times.

Hi Ina ... I made your Clam Chowder today. Had to use canned baby clams and a little chicken stock to make up the rest of the clam juice. It was so good. My 3 year old grand daughter loved it too! Thanks for such a great recipe. Take care.

I made this for my family and followed the recipe without any ingredient substitutions I used grass fed Irish butter and grass fed milk and it was DELICIOUS! Way better than any canned clam chowder you’ve ever had. Very nutritious with grass fed too tons of Omega 3’s, Iodine, Magnesium, some potassium and other trace minerals and healthy fats.

Heaven is getting Ina to make you a 2 gallon vat of her East Hampton clam chowder and no one else is there to share it with. If I had this pot of clam chowder I would eat it all by myself. Not even Jeffrey Garten will get some from me!!!!

Recently I’ve lost my appetite and was looking for a good clam chowder recipe, one of my favorite comfort food. I made this recipe and it turned out great! 👌🏻 I finished a big bowl and truly enjoyed it 😋 Please be advised the recipe is good to feed group of 3 to 4 people so I shared with friends and everyone loved it! It’s definitely worth to try!

Looks great! I also like to add dill and bacon to my chowder. Thank you for sharing. I had no idea about cutting the black part of the clams offb but then I never made fresh clam chowder either. Thank you for the cooking lesson. It will be cold enough to make soups here in about a month, can't wait.
